This product was one of the worst cooking items I have ever purchased and after only one use on low heat it had burn marks in the middle of the pan. I have other items from Cusinart and others that still have the same excellent stainless steel finish.

I just bought my few days ago from Bed Bath & Beyond since I had a 20% off coupon. I was very disappointed after I removed the wrap completely. First, I noticed that the area where the handle attached to the pan, above the logo is not polished. Then after my first use, the interior became discolored. Also, the handle is awfully thin that really hurt my hands while holding it. In addition, it get scrached easily. So... why am I spending extra money buying Calphelon???? For those reviewers who praised about their Calphelon, they probably bought theirs few years ago. Now, some (or most) of their products are made in China and the quality is just not as good as it used to be. So...if you see a really good deal, check up where it made from. 99% of time will be China, then... think twice before you buy.

1st time I used this pan browning link sausage the inside pan bottom got a burned on, bronze film that was *very* difficult to remove. in fact, there is still a slight residue. i attribute this to the lack of extra thickness on the pan bottom. this feature is typical on other quality pans. I suspect the heat transfer was too much although i had the burner on "low." I admit to trying to save a buck vs. "All-clad" brand but wish i hadn't

Originally bought the smaller size to make omlets. Loved it so much that I got this size for larger meals. I use it for everything. The quality and weight are excellent.
I don't have to worry about the poisons that "coated/Teflon" pans put out when heated.

This is an excellent value and a hell of a sound product. You cannot go wrong with pan. I recommend it to anyone, in fact, I purchased one for my mother after being utterly satisfied.

Well I'll cut right to the chase. First of all, having experience with both All-Clad & Calphalon tri-ply, the Calphalon is a great value. The All-Clad is overpriced. I don't care where they are made. I do care. I'm just not willing to pay 3X the price because its US made. Being basically of the same materials and construction,I do not prefer the performance of one over the other. Even the cosmetics are similar. Plus I much prefer the Calphalon handle. My suggestion would be that if you are not at least an intermediate level cook, this is probably NOT the type of cookware to start with. I feel there is a certain level of experience needed to truly appreciate what this stuff is capable of. I know it looks cool but lets be practical. To the reviewers that are having problems, here are a couple of very important suggestions-
1) READ the use and care instructions. If you do not still have them its all available on the website.
2)Use low to medium heat. I'm never above medium with tri-ply.
3)As for the discoloration after cleaning, it is NOT clean. I know it looks clean and feels clean but that is oil residue. The stainless steel will not stain. Hence the name, "stainless". Follow everything in the manufactures instructions exactly and you will be a very happy camper.

This is a wonderful pan for any chef, if used correctly. Forget what you know about teflon. Start over. Remember that when sauteing food nothing will stick when you correctly use a hot pan with hot fat. Except maybe eggs. Use a non-stick with eggs. It's just easier. But for the rest, always let your pan heat up (over medium heat, nothing higher is necessary) then add a small amount of fat (oil, butter, lard), about a tablespoon, maybe less. Let the oil get hot and then add your item. Test it though before you commit to it. Barely dip your food (steak, fish, potatoes, etc) into the oil and make sure it gives off a nice sizzle sound. That means you are ready to cook. If it's not ready, wait 30 seconds or so and test again. Always make sure your food is patted dry before going into the pan. A piece of meat or fish that is "sweating" (wet from being out after removing it from the refrigerator) will definitely stick unless you pat it dry with a paper towel. Also make sure that your food is completely thawed. Anything still frozen will produce moisture and become wet, promoting sticking. If you've done everything correctly and it still sticks at the beginning, that's okay. Let it cook a bit. Maybe move the pan around to loosen the item, if you think it's necessary. Let the oil run around the pan, underneath the food. Just don't force it loose with a spatula or tongs. Most food that sticks at the beginning will loosen by itself when it is finished cooking. When you are finished cooking your food, you will likely see some brown bits stuck to the bottom of the pan. That doesn't mean your food stuck. That's good stuff. Great for making pan sauces! It will come right up by deglazing. Or, if you're not making a sauce, you can soak the still hot pan with a bit of soap and water for a few minutes, 5 tops, and it will come right off.

Being the frugal type, I wondered if I should spend top dollar on cookware. I have always either bought cheap cookware, or relied on the kindness of others for hand me downs. I'm happy to say I have had no buyer's remorse with the Calphalon cookware. The pan heats quickly and evenly, which is a plus when using an electric stovetop. No problems with clean up, either.

I've used the pan twice to fry eggs at 7 setting on jenn aire and it performed well. It heated quickly and it washed easily with no discoloration.
